I will never pre-cut the sweet potatoes before boiling, and may never use sugar again...Steen's Pure Cane Syrup is fantastic!
...and pureeing a few of the potatoes with evaporated milk, 2 eggs, butter, nutmeg, cinnamon, and vanilla in the Nutri-Bullet, as opposed to mashing and stirring them all, did the trick for a pie filling that was neither too creamy nor too firm.
